Wullop Pasananon, known as Mr. One, left government work in Bangkok to stay in the north. He obtained land on Chiang Mai's outskirts and taught himself organic coffee farming. Shade-grown arabica at Mae Ton Luang goes through a wet mill powered by a nearby stream, producing washed and natural lots, including a 1,500 metre washed micro-lot with blueberry notes.
He moved from growing to roasting, and the farm's roasting workshop held a five-kilo roaster when Vice visited. The coffee is served at the farm in Doi Saket, at Nimman Soi 11 in Chiang Mai, and at Mae Kachan Hot Spring in Chiang Rai.
Roasting
Nine One Coffee operates a complete organic farm-to-cup operation. They grow Arabica at 1,450-1,550m elevation on their Doi Saket farm, process the cherries on-site, and roast all beans themselves. The forest-grown method under natural shade develops characteristic sweetness.
