Chiang Mai roaster and cafe group, named for a winding road.

An engineer from Bangkok, known as Thee, opened the first Graph with Ajaree in Sangkhlaburi, Kanchanaburi, in 2009. The road to that valley town wound up and down, like the graph of their lives. They moved to Chiang Mai in 2012 and closed the Sangkhlaburi cafe in November 2014.

Cupping started in-house in December 2016, and roasting began in December 2017 at Gateway Coffee Roasters on Thapae Road, now marked permanently closed on Graph's own site. Beans come from farms in Chiang Mai and Chiang Rai, and the team exchanged knowledge with Tennyson in Melbourne in 2018 and 2019.

At this shop

Graph X sits in the Mutana Building on Chang Moi Road, a timber hall with exposed rafters, a concrete floor and glass panels set in wooden frames. A curved plywood staircase rises behind the bar, and the roasting room at the back is walled in glass, so the roaster can be seen from the seats.
